T5A. Naive questions: a: how will I know if my hubs are too dry? Can I tell just by spinning the wheels? My mechanic skills aren't ready to get to work yet! B: I am loving the bike and will new wheels really make a difference to a newbie like me! Part of me thinks no as I am still working on my peddling technique.

A good indication of the hubs is just to spin it and see how many times it rotates freely. There isn't an exact number of revolutions ofcourse but you should get an indication if it's to few.
Another indicator is while you have the wheels spinning, feel for vibrations in the axle or surrounding metal. This is more likely suggesting an imperfection in the bearings interaction more than to little grease.
If I was you, unless you have specific need or desire to change the wheels, I would not. I would go out, enjoy the rides and learn your T5 and how it runs best. Like you suggest, once you think your own optimisations have plateaued, then new wheelset is a worthy upgrade.

Totally agree, i think i'm gonna get new wheels sooner than i should, but purely because they look good and the r501 wheels are going cheap. Not a neccessary upgrade though.

I think I'm well overdue new wheels. Year and a half and I just greased my rear wheels. Oh the shame!
Not sure if it's as a cause of me not servicing them but there was definite imperfections in the bearing track (if that's the right word) and I could feel grinding on the axle. Even though got mate to true the wheel, it's still not quite right but it is much better than before. R501 upgrade soonish.
