Coming to this a bit late, but to summarise all of this:
- You have a T500SE, which has a 9 speed cassette & chain (Could be Sora or Microshift - You don't say) - You have bought Aero 2024 wheels, which are compatible with 11 speed - You want to make things easier for going up hill
If you want 'more gears' (ie move from 9 speed to 10 or 11 speed) you have to change the cassette, chain, rear derailleur and shifters.
If you want a 'bigger range' of gears then just change the cassette. The smaller the smallest sprocket, the harder it is to pedal and the faster you can go downhill (or on the flat if you've got massive quads!). The bigger the biggest sprocket, the easier it is to pedal. You will use bigger largest cog if you are going up really steep hills (and I mean REALLY steep). The problem you can get with a wider range is a bigger jump between gears (so it can be a bit jerky and more tiring when you accelerate through the gears).
So, I personally wouldn't go too extreme on the cassette range. After a year or so of practice, I find that I can now drag my very large frame up most hills with my T5 Sora triple and 12-25 cassette.
With @robster1979 putting a 10 speed cassette on and keeping everything else 9 speed I think he may well have indexing issues, which is why he had a curious explanation of his gear selection.
