Hi - my wife has the T3 and looking for options to change the stock 23c tyres to something a little more comfy on off road. I know it's a road bike but it was given to us for free. What would be the chunkiest tyre I could go for that would fit the wheels/breaks?

If you look under the section you have posted and then further down in the sub-section 'Wheels & Tyres' you will find lots of threads on tyre sizes.
If yours is the 'red' T3 then you will just about be able to put a 25mm road tyre but with no mudguard on the front. If you have a black one then you might just about be able to get a 25mm road tyre with Crud Roadracer mudguards.
Bottomline - 25mm.
You have to remember these bikes were designed a while ago as a 'road bike' and when 23mm was en-vogue for the road. This was well before 'gravel-bikes' were marketed and your option back then for off road was a mtb or hybrid.

As above with a couple of cautionary comments. Tyres seldom measure exactly what they say on the side, this varies with manufacturer and model and also depends on the width of rim they're fitted to. Don't be tempted to use ones that only just fit, allow clearance for dirt and grit picked up by the tyre and wheel flex otherwise you can quickly wear through the frame.
