Hi,
I'm trying to decide on the best size for an Ultra AF 700/720 as I fall into the middle ground between small and medium. I've had a quick go on a small and medium in store but it's difficult to tell without going out properly on the road. The small definitely felt shorter, like I was positioned closer to the handlebars.
I'm around 5'9" (176cm) tall with an inside leg of 32" (81cm). My arm span is slightly longer than my height at 5'10" (178cm).
Any advice would be much appreciated!

The standard advice is smaller for more 'racey' fit larger more relaxed fit, by altering the stem I think you would be able to get a good fit on either. I'd take into consideration your preferences for bar width and crank length as these vary between the sizes and are a lot of faff/expense to change later if you feel the need.

I have an inseem of 32" and am 6'1. I have a M Ultra700, I originally had the large but it was too big as I could barely stand over the top tupe so I downsized to the medium. I would go for the small If I were you as I don't mind being a bit too small for the frame, I do mind not being able to stand over the top tube or reaching the pedals!
