Beauty is in the eye of the beholder. So really, your bike your choice. My 2pence worth silver...

Agree with @robert but personally I'd go for black as then it will match the usual colour of my chain and cassette.

Both look good but the black looks a mess if you scratch it. Less visible on silver. I'm clumsy and went for silver!

Is the 105 a noticeable difference in shifting and braking?

Is the 105 a noticeable difference in shifting and braking? no, it is light and dark compared to the stock 2300/ounce/btwin/generic.

To some point you may not feel tu much difference between the group sets (105, Ultegra, Dura-Ace). But anything below this will have an impact on shifting and breaking performance. As example a 105 group set will shift a lot easier and smoother than the 2300, wich is at the very bottom end on shimanos group sets. Also the breaking power will be much much better, than of a generic no name part. Not only the total power, but also the modulation of it. And of your the parts are lighter, stiffer and overall built of higher quality.

Is the 105 a noticeable difference in shifting and braking? Probably, but not much more than you would get if you got the stock kit properly set up and learned to use it to it's best advantage.

Can't comment on 105 but Ultegra is a huge difference over Sora, shifting is much smoother and easier and braking is a lot better.

I was confused by your comment, as you answered "no" when asked if there's a noticeable difference. Perhaps that's what yankun0567 was disagreeing with?

Bike is properly set up and taking it out daily. Really love the t3 as we all do on here. Can get 105 at a great price so thought I'd upgrade as a bit of fun and make a great bike even greater!
Just had no real experience with other road bikes.
