I understand we all get the upgrade bug, if thats whats makes us happy then upgrade away, you can always swap upgraded parts onto a new frame when the time comes plus its a great way to learn about bikes if your new to maintenance with the help of forums and Youtube.
However looking at the majority of the parts and there weights I'm not sure as I would class them as upgrades, apart from groupset, but more of replacements and I would guess some parts would indeed be around the same weights if not heavier.
I would hazard a guess your on a tight budget but can I put some suggestions your way.
Stem: Have you looked at the Kalloy Uno stem? Around 100grams for 100mm stem, best thing is the price of around £20 on ebay. Kalloy make oem stems in Taiwan but unheard of over here but search around and theres some good reviews. If I remember correctly the stock stem is probably around the same weight or lighter than the one your buying.
Wheels: Look at the Campagnolo Zondas, abit more expensive (£100 more Ribble) than those you listed and also a fair bit lighter than the Vento's, excellent reviews. I would hazard a guess the weight of the Shimano R501's would be around the same weight and a hell of a lot cheaper.

I've got Athena on secondhand bike I bought. Lovely Groupset! BUT, check the price of cassettes (even Miche), rear derailleur's etc etc. IF you might ever like a 32 cog in your cassette, go Shimano ( Campag go to 29, and Miche go to 30).
If you have the budget, and it's what you want, go for it. There may however be more cost effective options?

How much weight could actually be saved by changing the stem and seatpost?

I agree, it more a vanity/ uncontrollable need to mess about with my bike. I have not fitted the handle bars and stem yet. but going from alu seatpost/padded saddle to carbon seatpost/carbon seat was 300g ish saving. Not sure my arse will forgive me though

Thanks everyone for the feedback, in relation to body weight i have no more to lose really i only weigh around 60kg and im 6 foot. I also dont really want a new bike, to find one with the spec i want is generally unavailable until around the 2000 pound price range.
